The Perfect Guilt-Free Muffin!

 

imageSome mornings are harder than others, ideally I would like all of us to sit  down for breakfast together, but realistically, this doesn’t always happen. I began a quest for an easy, healthy, delicious recipe that can be eaten for breakfast, as an afternoon snack or after partaking of Holy Communion, (when all the children are starving)!

I found many recipes, combined a few, and ended up with the perfect muffin for my family. I hope you enjoy it as much as we do.

info: servings :12 prep time: 5 minutes cooking time: 15 minutes

Ingredients:

  • 2 bananas
  • 2 eggs
  • 1 cup Greek yogurt ( I use either plain and add my own vanilla or use the 0% vanilla)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup honey
  • 2 cups of rolled oats
  • 1/2 to 1 cup chocolate chips

Directions:

Preheat oven to 400 F, when baking always use the Bake setting rather than the Convection.

Put all of the ingredients,  except for the chocolate chips into a blender. Once the mix is liquefied, stir in 1/2 cup (I put 1 full cup) of chocolate chips, and poor into greased muffin tins.

Alternative:

I now have a Vitamix, and the friction heats the dough, so I blend all the ingredients except the oats, and chocolate, the transfer to a bowl. I then put the oats into a mini food processor grinding them to powder form before adding them to the rest of the ingredients. Add chips last. Don’t use paper muffin cups, they are hard to peel off these muffins.

Bake for 15 min

They can be frozen, but mine never make it!

    I finally did it! Super moist and tasty. I omitted the honey part as the bananas were sweet enough and the addition of semi sweet chocolate chips made them to my desired level of sweetness. Hope I can keep them longer to myself before the little boy discovers them!
