The Two-Meal Pork Loin

The boys play soccer two nights a week, and my hubby is their coach, and dinner is often difficult to coordinate on those nights. Daddy and I are trying to keep our meals healthy, and lean. Pork is perfect, it keeps well in the fridge, it can be frozen, cooks easily, and can be used in a multitude of ways.

Info: serves 4 , prep time:10  minutes cooking time : 40-50 minutes

Ingredients:

  • 2 pounds of boneless pork loin
  • 2 tablespoons dried rosemary
  • 1 1/2 cups of white wine
  • 1/4 cup of olive oil
  • 6 garlic cloves
  • salt and pepper to taste
  • 2 tablespoons of butter

The Perfect Guilt-Free Muffin!

 

imageSome mornings are harder than others, ideally I would like all of us to sit  down for breakfast together, but realistically, this doesn’t always happen. I began a quest for an easy, healthy, delicious recipe that can be eaten for breakfast, as an afternoon snack or after partaking of Holy Communion, (when all the children are starving)!

I found many recipes, combined a few, and ended up with the perfect muffin for my family. I hope you enjoy it as much as we do.

Ingredients:

  • 2 bananas
  • 2 eggs
  • 1 cup Greek yogurt ( I use either plain and add my own vanilla or use the 0% vanilla)
  • 1 1/2 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 cup honey
  • 2 cups of rolled oats
  • 1/2 to 1 cup chocolate chips
