Chicken Breast & Vegetables in Foil

Chicken breast, healthy protein, restores muscles and is a dieter’s staple! But Chicken is boring! On its own, it tastes like nothing!

Chicken is however an important part of our family’s diet, and we eat a ton of it. I find myself in constant search of ways we can eat it. There are many recipes I try, and many concoctions of my own, some make it on the blog, and others are a flop. Today’s dinner, was a success! And therefore, I find myself sharing it with you tonight!

Chicken Breast & Vegetables in Foil

Ingredients:

  • 2 Chicken Breasts
  • Green Beans
  • 1 Potato (par boiled)
  • 1 Sweet Potato
  • Red onion
  • Bell Pepper (I used  orange)
  • BBQ Chicken Rub (Olive oil, salt, pepper, paprika, onion powder, garlic salt)
  • BBQ Sauce (optional) (ketchup, brown sugar, worcestershire sauce)
  • Rosemary, salt and pepper.

Instructions:

  1. Wash chicken with vinegar, apply rub with a healthy amount of oil. Set aside.
  2. If you are BBQ, preheat to medium/high, if you are cooking this in the oven preheat at 400F.
  3. Slice bell pepper, and onion, and cube potatoes.IMG_0240 (2).JPG
  4. Using two pieces of foil, overlapping like a cross, put chicken in the center surrounded with vegetables. Pore remaining oil from rub over chicken breast
  5. Drizzle oil over vegetables, add salt, pepper and rosemary.IMG_0243 (2).JPG
  6. Seal the foil and cook for 25 min. Then open foil, add BBQ sauce and broil for 5 more minutes.

The combination of flavors infuses together in the foil, making the chicken flavorful, juicy and delicious, while the beans and peppers are just the right crunchiness.

    I tried it today!! It’s absolutely delicious!! I modified the receipt a little bit.. I didn’t have chicken breasts, so I used chicken drumsticks instead.. I also used butternut squash and green peas, shallots, and lime juice. It was really delicious and easy to make.. Thanks so much for sharing the recipe..

    This dish proves that you can take plain, ordinary chicken breast and make it extraordinary! Not only was the chicken flavourful, it was moist and finger licking good!! Would definitely do again!!
