Cauliflower Pizza Crust

I love pizza because it can be personalized. It also allows me to sneak in some veggies that otherwise would not be eaten.

I found this recipe on Cooking with a Wall Flower, I was very intrigued! I wanted to serve something healthy but fun for lunch, and this seemed like the perfect recipe. Bonus, it turned out to be really easy.

As for toppings: When I buy ground beef I always cook it the day of and freeze it. I slow cook it with onions, salt, pepper, in a little bit of butter and oil. I sometimes add  sausage meat or ground turkey. All this to say, I had some in the freezer, which I took out to top my pizza. I also chopped zucchini and shredded cheese.

Although my crust was not crispy, it was delicious. All member of my house loved it and ate it without questioning what it was made of! Seriously good for you, and that makes me a happy cook.

Cauliflower Crust

Ingredients:

  • 1 small or medium sized cauliflower
  • 1 large egg
  • 1 cup mozzarella or cheddar cheese (mozzarella works best)
  • ¼ teaspoon garlic salt
  • ½ teaspoon Italian seasoning

Instruction:

  1. Preheat the oven to 400F and lightly grease a baking pan with nonstick cooking spray.
  2. Line a 9 inch round pizza pan with parchment paper or lightly grease the surface with nonstick cooking spray. Set the pizza pan aside for now.
  3. Cut the cauliflowers into small florets. Place these florets into a food processor until the cauliflower becomes rice like, about 2 – 2 ½ cups of processed cauliflower florets
  4. Add the processed cauliflower florets into a large mixing bowl along with a beaten egg and mozzarella cheese. Mix until well combined and they appear dough like.IMG_0099.JPG
  5. Spread the cauliflower mixture onto the pizza pan until the dough is evenly rolled out. Make sure that there are no holes or thinned out areas.
  6. Bake the cauliflower crust for about 30-35 minutes until the crust appears browned. The crust should look crust like for a lack of a better word.
  7. Add the tomato sauce, and the topping and return to the oven until toppings are browned.

**The meat I used for the topping, I defrosted by putting on the stove top in a large enough sauce pan. I added tomato sauce, tomato paste, crushed tomatoes, italian seasoning and garlic salt. I let it simmer until dinner time. I then served whole wheat spaghetti with meat sauce.
