I found a recipe online and worked it into one that was a hit. Even by my worst critics said they loved it!
On Monday I made chicken broth from organic chicken, I deboned the chicken and put it in an airtight seal, I then put it in the fridge for later use. I used it today!
Of course as promised, this dish is prepared in less that 20 min!

Ingredients
- 3 slices bacon
- 3 cups diced cooked chicken (I used one whole organic chicken)
- 1 cup chopped fresh tomato
- 2 stalks celery, thinly sliced
- 1/2 cup low-fat mayonnaise
- 1/2 sour cream 0%
- 1 large avocado
- 3 minced green onion
- 2 tablespoon chopped parsley
- 3 tsp lemon juice
- 2 dash Worcestershire sauce
- salt and ground black pepper to taste

Directions
- Cook bacon in skillet, while bacon is cooking,
- Mix chicken, bacon, tomato, and celery together in a bowl.
- Whisk mayonnaise, sour cream, avocado, parsley, green onions, lemon juice, Worcestershire sauce, salt, and black pepper together in a bowl until dressing is smooth.
- Combine sauce with chicken mixture and serve in any style bread.
