Three things to do today that will make this week’s meals easier

1. Hard boil a few eggs

My friend Sylvia Fanous taught me to make the perfect boiled eggs. I put them in cold water with salt over medium-high heat, once  they boil, I turn off the heat, cover the pot and let them cook on their own for 10 min. Then remove them, put them in a bowl of cold water and into the fridge they go! This week, when I am pressed for time in the morning, I can eat an egg with my shake or make deviled eggs for my family. Deviled eggs are always impressive, and so easy to make. Recipe to come.

2. Make Chicken stock.

While eggs are cooking, I would prepare chicken stock. Chicken stock is an important part of cooking, and I only use stock I make myself from organic chicken. However, given our time constraints, it becomes complicated to make a tasty stock. I wouldn’t recommend leaving broth on the stove top overnight. The best way, is to make it in a slow cooker and freeze it in the morning. Always wash your chicken with a little vinegar and flour before cooking it, a trick I learned from my mom. Once the chicken is cooked it can be frozen for later or used to make club sandwiches for lunch or on a busy nights this week.

 

3. Mince garlic and freeze it.

I love cooking with garlic! It gives dishes flavor and it is good for you. However, mincing them is my pet peeve. My hands smell like garlic for days and I make a serious mess. My solution to all this, mince garlic all at once, and freeze. It is a huge time saver!
